That's exactly why I wrote about it! Mocktails have been around for a long time of course, but dry bars and these amazing beverages are a new standard. I hope it continues!

No “dry bars” near me in Canada. I like a nice kombucha some evenings, but my wife isn’t a fan. She would probably like the drinks you write about.

Looks like Ghia is available in Winnipeg and Calgary, but it's not widely distributed. These definitely do not have that sour, funky flavor that kombucha has, although most of them have tart notes from things like citrus or pomegranate. Until recently, I made my own things as I mentioned -- if she likes red wine, tart cherry juice is a great sub. Sparkling water with lime (and sometimes some orange juice), salt, and bitters is probably my fave easy one. A rosemary sprig adds a great botanical bump if you like a gin-like flavor.
