My mother used to make the very very best fruitcake! I was never a big fan of fruitcake as a kid growing up because I felt it was an old persons desert. Lol! But I do remember my Mom’s and it had a really nice lemony taste to it. She often found her recipes on the back of Betty Crocker etc. I wish I had it her recipe! 🤗
I think what I remember is hers had actual candy lemon in it. Not the lemon extract which has a funny taste. I might give one of these fruit cakes to try here. And add some lemon peel. Thank you so much for sharing nostalgic memories! Those are the Betty Crocker days! ✨💖✨
Real lemon is the way to go I think, yes. It might have been candied citron, which is lemony, but with an extra floral kind of scent, just lovely. If you've ever seen Buddh'as hand fruit in a produce market, that's one variety.

Yes, that's it! It's basically all rind, no pulp, so there's no tartness. I'm so glad this brought back memories for you! That's definitely one of my hopes. A lot of mid-century fruitcake recipes had a couple of ounces (not a typo) of lemon essence in them, but the white mystery cake up there from Betty Crocker has a whole cup of candied lemon peel, too. I hope you come across the right one someday.
